Egg in the Hole with Love
My dear friend, Dana, has been feeding my cooking obsession. For the holidays she gave me cooking supplies and for my birthday she gave me two new cookbooks. One of the cookbooks she gave me is called Look N Cook. The book is filled with 1950s inspired recipes complete with step-by-step instructions for children. My kid had a great time leafing through the book and when he found the Egg in a Hole recipe he wanted to make it. I suggested an alternative version of this classic which included a heart instead of a hole. He was even more excited about that and voila, another new favorite breakfast in our household!
Ingredients:
2 eggs
1 tablespoon of milk
2 slices whole wheat bread
cooking spray
1 heart shaped cookie cutter
Crack two eggs into a cooking container with a spout. (We used a Pyrex measuring cup.) Add milk and whisk eggs. Set aside. Place two slices of bread on a cutting board and press cookie cutter into center of bread until the heart shape can be easily removed. Spray non-stick frying pan with cooking spray and place bread in pan and place over medium heat. Pour egg into heart cut out and cook until egg is no longer liquidy. Flip bread over and cook for just a moment. Flip egg from frying pan onto a plate. Repeat with second slice of bread. Serves 2.
