Polenta Pizza Stackers

This was my first week back to work since I had the baby. Today I came home to a hungry baby and an even hungrier little boy. It was hard to resist the urge to make chicken nuggets but we managed to pull together something just as kid friendly! My kid actually named this recipe himself. As soon as he saw what we were doing he said “these look like mini pizza stacks!” Cute.

Pre-made polenta is great food for practicing young knife skills. It’s also very versatile and has a very long shelf life so it’s the perfect thing to keep in the house. It also tastes pretty darn good – especially smothered in sauce and cheese. My kid agreed. Now for the recipe…

Polenta Pizza Stacker Recipe

Prep Time: 10 mins  Cooking Time: 20 mins

Ingredients:
1 tube pre-made polenta
1 cup marinara
1/2 cup shredded part skim mozzarella
olive oil cooking spray
basil for garnish

Preheat the oven to 400 degrees. Slice polenta into 1/4 inch thick pieces. Arrange on a greased cookie sheet. Spray the tops of the polenta and place in the oven for 15 minutes. Remove from oven and top each slice of polenta with a scoop of sauce and a small pile of cheese. Turn oven up to 450 degrees. Return polenta to oven for 5 minutes or until cheese melts. Remove from oven and let sit for a few minutes so cheese doesn’t slide right off. Use spatula to carefully stack 3 to 4 polenta slices on top of each other and garnish with basil. Serve immediately. Makes 3 to 4 stacks.
