Star Layer Cake
Since the fall there’s been a sign on West 3rd Street that says Magnolia Bakery Coming Soon. I drive by that sign several times per week hoping against all hopes that the place will be open. But alas, it is still “under construction” so today we attempted to make one of those famous Magnolia cakes ourselves.

My kid thinks this is “the coolest cake EVER.” He absolutely loved our new cake stand that spins for frosting and really enjoyed lining up all the berries to form a star. He wants us to make something just like it for his next birthday. I must admit, I’m really proud to be taking it to a 4th of July BBQ tonight! Now for the recipe…
Star Layer Cake
adapted from Magnolia Bakery Recipe
Prep Time: 45 mins Cooking Time: 25 to 30 mins
Cake Batter Ingredients
1 cup unsalted butter, softened
2 cups sugar
4 large eggs, at room temp
1 1/2 cups self rising flour
1 1/4 cups all purpose flour
1 cup milk
1 teaspoon vanilla extract
Frosting Ingredients
1 stick unsalted butter, softened
1 pound confectioners sugar
1/4 cup milk
1 teaspoon vanilla extract
1 large package blueberries (washed + dried)
Preheat oven to 350 degrees F. Spray two 9 inch round baking pans with baking spray. In a small bowl, combine the flours. Set aside. In a large bowl, on the medium speed of an electric mixer, cream the butter until smooth. Add the sugar gradually and beat until fluffy, about 3 minutes. Add the eggs, 1 at a time, beating well after each addition. Add the dry ingredients in 3 parts, alternating with the milk and vanilla. With each addition, beat until the ingredients are incorporated but do not over beat. Using a rubber spatula, scrape down the batter in the bowl to make sure the ingredients are well blended. Carefully spoon the batter into the cake pans, filling them evenly. Bake for 25 to 30 minutes, or until a cake tester inserted into the center of the cake comes out clean. Cool the cake in tins for 15 minutes. Remove from the tins and cool completely on a wire rack before icing. While cake is cooling, use your word processing program to make a star shape (of desired size) and print it out. Cut it out and set aside.
To make the frosting place the butter in a large mixing bowl. Add 1/2 the sugar and alternate adding milk /vanilla and remaining sugar while beating on medium speed until creamy.
Remove tops of each layer cake to make them even. Frost the top of one cake and place the other cake neatly on top of the frosting. Frost the rest of the cake. Place the star shape on top of your cake and trace around it with a toothpick. Remove the paper star and follow the lines to make a star shape out of blueberries.
