Smoked Salmon Tea Sandwiches

I hosted a bridal shower at my home this weekend.  My husband was out of town and I really wasn’t sure how I would get everything done. Turns out my kid is an excellent party thrower! He wanted to partake in everything including folding the napkins “his way” which was adorably messy and corrected as soon as he was out of site! I can’t say that it was efficient, but it was fun and we got a lot of cooking done.

Prep Time: 20 mins

Ingredients:
3/4 cup cream cheese
1/4 cup red onion (very finely chopped)
1 1/2 tablespoon capers
2 persian cucumbers (sliced very thin)
1 loaf of artisanal wheat or whole grain bread (the more dense the better)
1 large package smoked salmon

In a small bowl combine cream cheese, red onion and capers. Set aside. Slice bread into even sized pieces and spread the bread slices with the cream cheese mixture. Top 1/2 of them with the cucumber and salmon (distributing the it evenly) and top the sandwiches with the remaining bread slices. Cut off and discard the crusts and cut each sandwich into small rectangles.
