Peaches and Cream Oatmeal
Remember one of our very first recipes for Baked Oatmeal? It has since become a staple in this house! Today we decided it was time to reinvent this old favorite so we looked in the cabinet to see what alternatives might surface. A jar of peaches caught my eye and we proceeded with a new Peaches and Cream Oatmeal Recipe based on our orginal Baked Oatmeal Recipe. We were both very pleased with the results!
Prep Time: 10 mins Cooking Time: 35 to 40 mins
Ingredients:
1 tablespoon canola oil
1 teaspoon baking powder
2 cups sliced canned peaches
1/2 cup juice from sliced peaches
1 teaspoon ground cinnamon
2 tablespoons brown sugar
2 cups old fashioned oats
1 egg
1 egg white
1 1/2 cup lowfat milk
Preheat oven 350 degrees. In a medium sized bowl combine egg, milk, juice and canola oil. Whisk in baking powder until no longer clumpy. Add oats and cinnamon. Stir to combine. Pour batter into well greased 9 inch square baking pan. Spread batter evenly and place peach slices on top. Sprinkle with brown sugar. Bake for 35 to 40 minutes or until set. Scoop into bowl and add a splash of warm milk if desired. Serves 4.
Note: This batter can be made the night before. Just remove from fridge and add peaches before cooking.

I read this recipe this morning but didn't have peaches so I made a variation: fresh blueberries in lieu of peaches and apple juice instead of peach juice. Delish! This was easy and the timing was perfect. The baking time gave us just the right amount of time to dress, and watch Caillou before breakfast. Max loved it and ate a healthy happy smooth breakfast. I made this oatmeal the other day and I loved it. Tonight I am going to try and make strawberries and cream. I really hope it works. I have been letting the berries sit all day with a little sugar on them so I can use that juice in place of the peach juice. Thanks for the great recipe.
Ok I made the strawberries & cream and it turned out fabulous. I sweated out my berries with 1/2 cup sugar and used the juice in place of the peach juice and I left out the brown sugar. It worked great!
