Harvest Grains

Trader Joe’s strikes again with a delicious packaged blend of dried Israeli cous cous, red quinoa, chic peas and orzo. It doesn’t contain any Rice-a-Roni style “flavor packet” it’s just the grains and can be found near the dried rice in the market. My kid is crazy for it! We love using it as a base for a good recipe!
Prep Time: 8 mins Cooking Time: 15 mins
Ingredients:
1 16 oz bag Trader Joe’s Harvest Grains
4 to 6 carrots (peeled + diced)
1 small onion (diced)
1 tablespoon olive oil
3 packets vegetable broth concentrate
1 tablespoon chopped fresh parsley
In a medium pot saute onions in olive oil over medium heat until translucent. Add carrots and saute for another few minutes. Add 3 1/2 cups of water to pot and bring to a boil. Pour vegetable packets and harvest grains into boiling water. Bring back to a boil, reduce heat and simmer covered for 10 minutes or until all the liquid is absorbed. Remove from heat and transfer to serving bowl. Sprinkle the top with fresh parsley. Serves 4.
Note: if you like carrots a bit crunchier, wait until you pour the water in to add them.
