Groovy Granola

Since the oatmeal is such a big hit in our house, we decided to attempt to make home made granola.  We started with the simplest of recipes just to get our hands dirty!  This came out tasty and perfect for sprinkling a top yogurt, ice cream or mixing with other cereal for an extra crunch.  My kid “tested” it at every stage. Thumbs up on all manner of granola. Stay tuned for more crunchy, clumpy granola in the future.

Prep Time: 10 mins  Cooking Time: 20 mins

Ingredients:
4 cups rolled oats
1 cup raw almonds
1/2 cup raw pipita
1/2 cup chopped pecans
1 cup dried cherries (chopped)
1 cup agave nectar
1 tablespoon cinnamon
1 teaspoon vanilla extract
1 pinch of salt

Preheat oven at 350 degrees. Place 9×13 baking dish on stove top and cook oats over medium heat for 5 to 7 minutes or until they start to darken. Stir in nuts and seeds and cook another 3 minutes. Pour in agave, vanilla, cinnamon and salt. Stir until all contents are mixed together and slightly shiny. Bake for 10 minutes and stir granola mixture. Bake another 10 minutes and remove from oven.  (Total baking time is 20 minutes.) Let cool and store in sealed container.
