I found a new way to get my kid to eat an entire bowl of veggies – just add bacon! I must admit that he was taste testing the corn and green beans before they were even cooked, but the bacon made it extra appealing and I can’t say I blame him. In my own defense, I did use nitrate free 95% fat free turkey bacon from Whole Foods

Green Bean & Bacon Succotash

Prep Time: 8 mins  Cooking Time: 15 mins

Ingredients:
4 ears of fresh corn
1/2 pound green beans (washed + trimmed)
4 slices nitrate free turkey bacon
2 tablespoons olive oil
salt + pepper

Shuck corn and remove all silk. Cut kernels off each ear with a sharp knife. Cut green beans into 1/2 inch pieces. Place corn kernels and green beans in a medium bowl and toss with olive oil. Season with salt and pepper and saute in a frying pan over medium heat until corn begins to just brown. Remove from heat and transfer to a bowl. Set aside. Place bacon in the same frying pan and cook until brown and just beginning to crispen. (Do not make bacon super stiff!) Remove bacon from heat and dice up into bite sized pieces. Return veggies to frying pan, add bacon and re-warm everything together over low heat. Serves 4.Green Bean & Bacon Succotash
