Breakfast Potatoes
Remember that Fingerling Potato Recipe from the other day? The leftovers have been sitting in my fridge… this morning I decided to teach the important lesson that what’s old can be new again! We broke out the leftovers and made them into breakfast ‘taters. So easy (I just used the toaster oven) and oh so good.
Prep Time: 5 mins. Cooking Time: 10 to 20 mins.
Ingredients:
left over fingerling potatoes
olive oil or cooking spray
paprika
Cut fingerlings in thirds. (Great way to let your kid practice knife skills.) Coat the bottom of a small toaster pan with a teaspoon of olive oil or cooking spray. Spread potatoes on pan and sprinkle with paprika. Bake in toaster oven at 400 degrees for 10 to 20 minutes. Time will vary depending on how soft they were to begin with. They are done when they are golden brown and crispy. Serves 2 to 4 depending on how much was left over!
You might have notice that leftover potatoes are easier to crisp, thats because they lose moisture as they sit in your fridge. Most of us don't have the space in the fridge to keep old potatoes around, but its worth it!!
