Caprese Stackers

Who needs Legos when you can have so much fun with food? Making these Caprese Stackers is entertaining and educational! It reinforces sorting and pattern making. My kid quickly figured out that the stacks fall over unless you start with the biggest slices on the bottom and work your way up. I loved watching him assemble these beauties.

Caprese Stackers

Prep Time: 12 mins

Ingredients:
2 vine ripened tomatoes (washed + patted dry)
15 to 20 leaves of basil (washed + patted dry)
1 lb fresh mozzarella
balsamic vinegar for drizzling
olive oil for drizzling
fresh cracked pepper
kosher salt

Slice tomatoes and mozzarella into 1/4 inch slices.  Arrange 4 small plates on the counter and begin by stacking tomato, mozzarella and basil on each plate in an alternating pattern.  Be sure to finish off with a small basil leaf on top.  Drizzle each stack first with balsamic vinegar then with olive oil. Crack pepper on each stack and salt to taste.  Serves 4.
