I never set my alarm. That’s what kids are for. But, on a very rare occasion (like this morning!) our kids BOTH sleep in. Mornings like that require breakfast on-the-go and these breakfast bites are packed with protein, fiber and omega 3. Plus, my kid cannot get enough of them. We bake up a batch at the beginning of the week and eat them as breakfast or a snack.

A typical boy, my kid likes any recipe that involves machinery and he gets very cross if I use the mixer it without him. Yes, I’ve created a monster. He’s really mastered the Kitchen Aid and can pretty much gauge what speeds to mix things at without any guidance from me. (He’s also better at the iPhone!)

Trail Mix Breakfast Bites

These little bites pack a real punch. They keeps the whole family satiated until lunch.

Trail Mix Breakfast Bites Recipe

Prep Time: 10 mins  Cooking Time: 10 to 12 mins

Ingredients:
1/2 stick butter
1/4 cup brown sugar
1/3 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1 3/4 cups rolled oats
1 1/3 cup trail mix (we use Trader Joe’s Omega 3 trail mix)

Heat oven to 350 degrees. Whisk together flour, baking soda and salt. Set aside. Beat butter and sugars on medium speed of electric mixer until creamy. Add eggs and vanilla; beat well. Add flour and bet on low until combined. Stir in oats and trail mix. Form dough into 1 1/2 inch balls and place onto a Silpat lined baking sheet. Gently flatten each ball with your hand and bake for 8 to 10 minutes or until golden brown. Transfer to a baking sheet and enjoy. Store tightly covered. Makes 2 to 3 dozen breakfast bites.

    I just found this recipe and it looks great! However I am a bit confused by the amounts of the ingredients. Could you please let me know how much "..1/2 stick butter.." is? Is this based on a stick being 250g? I live in France and European recipes always lists the ingredients by the weight. Any help would be most appreciated. Thank you!
