Mini Multigrain Cranberry Muffins
Spoiler alert! We made these yummy little muffins using the Trader Joe’s Multigrain Pancake Mix. My kid likes them so much that he refers to them as cupcakes! They bake up super fast and can be eaten as a breakfast treat or a healthy snack.
Mini Multigrain Cranberry Muffins
Ingredients:
2 cups TJ Multigrain Pancake Mix
2 eggs lightly beaten
1 cup applesauce
3 tablespoons canola oil
1/2 cup sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
3/4 cup dried cranberries
Topping:
1/2 cup rolled oats
3 tablespoons brown sugar
2 tablespoons butter diced
1 tablespoon flour
Preheat oven at 400 degrees. In a large bowl combine dry ingredients: pancake mix, cinnamon, sugar and nutmeg. Set aside. In a smaller bowl whisk together eggs, apple sauce and vegetable oil. Pour egg mixture into dry ingredients and stir until just combined. Add dried cranberries. Mix together but do not over stir. Set aside. To make topping combine oats, brown sugar and flour. Add diced butter a few pieces at a time and squeeze together with fingers until all ingredients are slightly lumpy and stuck together. Scoop batter into well greased mini muffin pans. Cups should be 3/4 full. Sprinkle each muffin with topping and bake for 7 to 9 minutes or until toothpick comes out clean. For a moist muffin, be careful not overcook! Makes 24 – 30 mini muffins.
Warning: leaving these out on the counter may result in their rapid disappearance.

These muffins are delicious. Since we were out of cranberries, we made them with chopped dried cherries instead. We're definitely adding this recipe into regular rotation.
