Swell Supper: Comfort on This Day of Remembrance

My husband is in NYC for work this coming week, but he left early so he could be there for the memorial today. It was important for him to go back and be with his friends and family and where he was living 10 years ago to find comfort with those who experienced this with him. I think most of us are feeling the need for a little comfort these days, no matter where we live or where we were on September 11, 2001. It is a day of remembrance and it is also a day to come together so I am inviting my friends and neighbors over for some love, laughter and good old American grub. For tonight’s swell supper we will be making Peach and Friends Cobbler Pie, Cornbread Donuts, and Veggie Chili (feel free to add some meat!).

Begin with the veggie chili because it can stay on the stove and simmer while finishing up the rest of the meal. When the chili boils and needs to be turned down to simmer, preheat the oven to 400 degrees F. Prepare the cornbread batter and pipe into the donut pan according to the recipe. Bake for 5 minutes for mini 8-10 minutes for large – remember to set the timer!

Now move on to the peach and friends cobbler pie. Prep the ingredients for the pie.  Make sure to pay attention to the timer because it should be going off for the cornbread! Remove the cornbread donuts from the oven and turn the temperature up to 425. While you have stepped away from the pie you might at well add the can of refried beans to the veggie chili and let it continue to simmer.

Finish prepping the pie and place it in the oven for 15 minutes. Turn the cornbread donuts out onto a cooling rack. Set the table and place the donuts in a bread bowl. Reduce the oven temp to 350 and cook for an additional 35-45 minutes. Place all the toppings on the table and call everyone to serve up some chili and conversation. The pie should be done when dinner is wrapping up, let it cool for a few minutes then serve with ice cream.  Doesn’t that sound comforting and swell?!
