Swell Supper: Reduced Guilt Diner Food

As a kid I remember going to the grocery store with my mom and picking out russet potatoes, they seemed gigantic and I needed two hands.  We would make all kinds of delicious food with our potatoes, potato salad, baked potatoes, mashed potatoes, but my all time favorite was when we made baked potato chips. My parents sometimes added brewers yeast, but I preferred salt only. Even as a kid I loved them better than the store bought fried version. I ate them with everything too, once I even put them on my peanut butter and jelly sandwich. My mom usually served them with burgers and, of course, I would put the chips on my burger. For tonight swell supper I am taking a trip down memory lane and serving up Oven Baked Garlic Potato Chips, Open Faced Avocado Patty Melt, Sesame Greens, and Baked Apple for dessert.

It’s important to serve the baked apple warm, so we are going to prep everything, then cook it. Preheat your oven to 375 degrees. Begin with the turkey patties for the open faced avocado patty melt. Make sure the ground turkey is coming straight out of the fridge. Set aside and prep the green beans and asparagus for the sesame greens and slice the potato for the chips and place in a bowl of water.

Now that everything is prepped make the baked apple and pop it in the oven. While the apples bake place the potatoes on a silpat lined cookie sheet and sprinkle with salt and garlic powder. Put the chips in the oven, they will need a few extra minutes to cook because the oven temp is lower than the recipe calls for. Cook the patties and let them rest for 5 minutes. While the patties rest blanch the greens and transfer to a pan and cook according to the recipe. Slice the patties in half and assemble the patty melts.

Remove the potatoes from the oven and place the patty melts in just until melted. Plate up the dinner and take the apples out of the oven. The baked apples should be cool enough to eat and still warm by the time everyone is ready for dessert. Now doesn’t that sound swell?
