PB&J Stuffed French Toast

On Black Friday, I like to spend the day with family and friends avoiding the holiday craziness. (You will find me doing some online shopping on Cyber Monday, however.) This stuffed French Toast is the perfect brunch-at-home recipe that can be easily adapted to any taste.

My husband requested apricot jam, I wanted strawberry and my kid wanted cream cheese instead of peanut butter. I told my friend, Dana, about this French Toast and she immediately declared she’d be making it with peanut butter and honey instead of jelly. So it seems like there’s something in it for everyone.

Basically you just make your favorite sticky sandwich and turn it into French toast. How can that be bad? Now for the recipe…

PB&J Stuffed French Toast Recipe

Prep Time: 10 mins  Cooking Time: 10 mins

8 pieces of bread (we used Challah)
peanut butter
4 eggs (or 2 eggs and 4 egg whites)
1 1/3 cup milk
1 teaspoon vanilla extract
powdered sugar for dusting

Make 4 peanut butter and jelly sandwiches. Set aside. In a shallow dish whisk together eggs, milk and vanilla. Heat up the griddle until it sizzles when you throw water on it. Dip the sandwiches in the egg batter, flipping to make sure both sides soak in the liquid. Transfer each sandwich to the hot greased griddle and cook until brown and toasty on each side. Let rest a moment before cutting in half. Sprinkle with powdered sugar and serve. Serves 4.

    Sounds delicious! Our favorite is thick cut bread that is coated in crunchy cereal, you start it on a flat top to brown then finish it in the oven…mmmm.

    I see this as Christmas morning breakfast. Yummm. We just purchased a George Foreman Grill and have been experimenting with stuffed sandwiches like this. I am pretty sure I will get an all thumbs up on this.
