Broccoli Cheddar Biscuit Muffins

In the past I’ve mentioned that my kid and I were both delighted to find ready to bake biscuits in the refrigerated section of Trader Joe’s. These biscuits taste every bit as sinful as the Pillsbury kind but have none of that artificial crap in them. They may not be from scratch but they bake up to be pretty darn dee-lish!

We started with a the Trader Joe’s biscuits as a base and we pretended we were planting a garden. First, my kid dug the hole, then he planted the broccoli and finally sprinkled it with cheese. We put it in the oven and biscuit puffed up in a muffin shape all around the fillings. The broccoli on top got slightly roasted which made it even better than expected. They were the perfect compliment to our dinner. Now for the recipe…

Broccoli Cheddar Biscuit Muffin Recipe

Prep Time: 10 mins  Cooking Time: 10 mins

1 package ready to bake biscuits
2 cups broccoli florets (blanched + chopped)
1/2 cup shredded cheddar cheese

Preheat the oven to 400 degrees. Grease a muffin tin with cooking spray. Using one biscuit at a time, place a biscuit into the muffin cup and then press down to “dig a hole” in the middle. Plant your broccoli by dividing it evenly among all the biscuit cups. Sprinkle cheddar atop each biscuit and  bake for 10 to 12 minutes or until the biscuits are turning golden brown. Serve warm.

    please let us know how they turn out with homemade dough. now that i know how amazing they taste, i might be a little more ambitious next go-round.

    As a first time cook and having tried a few of your recipes I need a little more insight. What do you mean when you say brocoli blancked? Probably a stupid question but would rather ask then not..

    Not stupid at all! Bring a pot of salted water to a boil. (A pinch of salt is fine.) While it's heating up, prepare a bowl of ice cold water (lots of ice cubes!) in the sink. Throw your veggies in the boiling water and cook for only 1 or 2 minutes. Drain and immediately submerge your veggies in the ice cold water. This stops the cooking process and prevents your veggies from going limp. They will be perfect and crisp (but cooked) every time!

    Ohh, this is somewhat like planting a garden. how fun! I think these would taste great with a puff pastry crust too! But of course.. less healthy? Hehe.

    Yes, Trader Joe's is a store. One that I love. Hmmm… I wouldn't call these "good for you" but they aren't made with hydrogenated oils and don't have weird fake ingredients. So, I consider them much better than Pillsbury. I believe that Whole Foods also carries non-offensive refrigerator biscuits.

    I found your website on Foodgawker whilst looking for ideas for my toddler sons snacks, loved this idea.     Made these today for lunch for my 3 y/o and 1 y/o. The 3 year old loved filling the muffins cups. They gobbled them up! Had all the ingredients already in the fridge and had remembered this post as something I wanted to try! Thanks for a yummy lunch!

    So I saw these and HAD to make them! We love broccoli in this house. I didn't use Trader Joe's biscuits-don't shop there as its a bit of a drive. I opted to use flaky biscuits (Pillsbury) and filled with the blanched broccoli (chopped before blanching) and cheese. The only thing I will do next time is to add more cheese. I think I will start out with cheese, top with broccoli, and add more cheese on top. I also may add a little bit of salt to the broccoli before filling just to give broccoli more flavor.

    But I have to say when I made these tonight they were ALL GONE!! My almost teenager ate 3 of them! My second ate 2 and I had 2. I would have eaten more but there none left! Even the hubby raved. I have made biscuits with taco meat and cheese filling before but never thought about adding veggies. Now I'm thinking that these would be good with some zucchini in the middle or maybe like spinach and parmesan or something like that.

    Love these!!! My 18 month old would not make the transition to non-pureed veggies. I’ve tried these in mini size and now he likes to eat the broccoli out of the middle.

    I would love any other filling suggestions.

    I have done these a few times as part of a freezer cooking session and after they cooled put them in a ziploc bag in the freezer. Makes an easy side dish to take out and have alongside a main dish like veggie meatloaf!
