Bite Sized Greek Salad

I promised to bring an appetizer to a friend’s birthday gathering this week. I wanted to make something light and bite-sized. These individual Greek salads are the perfect party pickup food and per usual my kid liked being able to do the skewering! (Anything on a stick is a hit!)

My kid did as much grazing as making but I can’t complain because he was eating healthy bits of cucumber and olives. I kind of got the feeling he’d eat anything on a toothpick. Except for tomatoes! Still haven’t gotten him to try them. I’m not giving up yet. Now for the recipe…

Bite Sized Greek Salad Recipe

Prep Time: 25 mins

3 to 4 Persian cucumbers sliced in rounds
1 1/2 pints cherry tomatoes (buy smaller ones)
1 cup pitted Kalamata olives (halved)
1 block of feta (cubed)
1 tablespoon fresh lemon
2 tablespoons olive oil
3/4 teaspoon oregano
fresh pepper

Set up an assembly line with veggies and cheese in bowls. Use a toothpick to skewer the tomato, then the cucumber, then the olive (cut part facing down) and finish with a cube of feta. Stand the skewer on a platter. Repeat until all ingredients are gone. Put lemon, oil, fresh pepper (to taste) and oregano in a jar and shake shake shake. Drizzle dressing over skewers JUST BEFORE serving.

    Perfect appetizer! I think I might be able to get my kid to eat salad on a stick, especially where there is no lettuce.

    I love Greek salad, but I 'm not a huge fan of Feta *read as avoids it at all costs!*

    I'm making these for my BBQ today and I think i'll use the cuke as the base. Will add a bit more stability. Don't know if i'll add the dressing – might make for a mess since these are finger foods…

    after making about 30 of these i determined that using the cuke in the bottom doesn't work so well because the middle of the cuke doesn't hold the toothpick. so feta on the bottom it is!

    My boys eat pretty much anything. Tomatoes has been one they are not to eager to eat. I started with tomato past on pizzas, then added sun dried tomatoes (they love them!), and homemade marina. Not sure what it is about a raw tomato, but the rest seem to work. Maybe tried other versions! 🙂 Good luck. Fantastic looking appetizer. May use it for bunco.

    He'll eat it in other forms, just not as a tomato. I keep trying! I've never played bunco but I hear it's great. I've got to get into it!

    Absolutely brilliant! My 8 year old will also eat anything on a toothpick. I had some leftover toothpicks with little paper bunnies on them. I made 'shish kebobs' similar to yours (bitesized cukes/cheese/ham/tomatoes) with these toothpicks and sent her off to camp the other day. She loved it all! Now I am making my own dressy toothpicks with little stickers from my daughter's huge sticker stash. Adorable! Many thanks for this terrific recipe which really got my creative juices flowing!

    I have to make a point of not looking at delicious food recipes when I am hungry. It’s the same problem as going to the store when you’re hungry. I want to pop every single one of those delicious looking bite sized Greek salads. I love the idea of a broken down salad. They call it “deconstructed” on Top Chef! I absolutely LOVE kalamata olives and feta and tomoatos and oregano and oil and lemon and cucumbers! You are smart, lady, very smart.

    Fantastic! I just made these for a grown up party and were a huge hit. The only change I made was to use a whole kalamata olive. So easy, tasty and impressive looking too.

    I made these for a Memorial Day cookout yesterday and they were amazing!! I used whole olives and added some balsamic to the oil and lemon combo. Since I used more ingredients the toothpicks would not stand up on their own, so I laid them on their sides and the presentation was still very nice. Thanks for the great idea!
